- 2 large sweet potatoes
- 3 garlic cloves, minced
- 1¼ tbsp olive oil
- 1 tbsp parsley
- 1 tsp sea salt
- 1 tsp fresh-ground black pepper
- Preheat oven to 350°F.
- Rinse and dry sweet potatoes. Cut ends off, then slice into 2 inch long pieces.
- Mince garlic cloves
- Place sweet potatoes on a baking sheet
- Drizzle with olive oil, then add parsley, salt, and garlic. Toss with your hands to coat well
