Traditionally, Fourth of July celebrations are ridden with processed junk food (think hot dogs and potato chips) and dessert laden with toxic food coloring. Switch it up this year by adding a fresh, healthy twist to your Fourth of July menu! Nature is on your side in this festive red, white, and blue fruit salad.
- 1 large watermelon
- 3 cups blueberries
- 1/3 cup packed mint leaves, finely chopped
- Juice of 2 limes
- Pinch of cayenne pepper
- 4 ounces feta cheese (optional)
- 1 Tbsp honey (optional)
- Combine the watermelon, blueberries, mint leaves, and cheese (if using) in a large bowl and give it a toss.
- Sprinkle with lime juice, cayenne pepper, and honey (if using).
- Toss to coat and serve!
